Well, I was asked a few weeks ago if I would be interested in doing a demonstration at the market. I figured seeing how much the market does for me as a vendor, the least I could do was give them a few minutes of my time and a few pies for our loyal dedicated patrons to sample! It was decided I would do a short discussion on how to make an easy Pie Crust.

Needless to say I was a nervous wreak on Friday, I have never really done anything like this before and was quickly wondering what I had gotten myself into!! I figured I would just let Winter know how I was feeling so if, on Sunday, I stood there with my mouth open with no words coming out she would hopefully understand! She gave me some sweet little pointers and that is what I ran through my mind Saturday as I baked from sun up to sun down. I love the fact that I am blessed with these wonderful people that are full of such great advice, know exactly what to say and are so full of understanding.
I was met this morning by Regan, who would be running the demonstration, with a huge smile and an offering of any kind of assistance I might need and a hefty dose of encouragement. The time came to make my way up to the demo tent. There were already people beginning to gather and then the announcement was made "Tricia Millix from Millix Family Farm will now be demonstrating how to make a great easy pie crust", game on - time to do my thing.

I was amazed at how much easier it was than I expected. Winter was so right, not that I ever doubted her, every person there is rooting for the vendors they have come to know and trust at the market. They truly want to support us in every way they can, be it buying our products or just being there at the market every Sunday. I have so much respect and gratitude for our loyal patrons and for the amazing group of organizers that put their heart, soul, blood, sweat and tears into every single thing that has to do with the overwhelming success of this wonderful market! So, on that note, I will leave the recipe for the easiest, tastiest, flakiest pie crust I have ever made and thank you all who make the market such a success. Thank you all for your continued support and always try to make it from scratch, it is a great feeling of accomplishment and it is full of love!

INGREDIENTS :
1 1/4 cups all-purpose flour
1/4 teaspoon salt
1/2 cup butter, chilled and diced
1/4 cup ice water
DIRECTIONS :
In a large bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in water, a tablespoon at a time, until mixture forms a ball. Wrap in plastic and refrigerate for 4 hours or overnight.
Roll dough out to fit a 9 inch pie plate. Place crust in pie plate. Press the dough evenly into the bottom and sides of the pie plate.
My number one piece of advice for a flaky crust is to KEEP IT COLD! Everything; the butter, the water (add a few ice cubes), even the bowl!
For a perfectly round crust, after you roll your crust use a 10" dinner plate placed upside down to cut a perfect circle.
